Well what a fabulous day at the Flower Power Fair at Holme Pierrepont Hall in Nottingham yesterday. After a week of cloudy and rather chilly days we ventured off all wrapped up for a chilly day. This was our first outing taking Libby-Loo on a trailer. We took a slow and steady ride out to Nottingham and arrived in plenty of time. As soon as we were pitched up and the hatch was opened the Sun shone for the rest of the day. With over 450 visitors we were kept busy throughout the day. Ever so Easy Easter Rocky Road

Ingredients 250g Dark Chocolate 50g Butter 175g pouch of Maltesers 8 digestive or rich tea biscuits 60g baby marshmallows 90g Chocolate Mini Eggs Handful of sugar sprinkles Method Line a 20cm square baking tray with parchment paper or tin foil. Melt the chocolate and butter in a bain-marie. I always use a good quality chocolate, one that you would enjoy eating. Once melted leave to cool slightly before adding the other ingredients, you don’t want them to melt into the hot chocolate mix.
