Gingerbread Men
One of my New Years resolutions was to start a blog and this is one I will try my hardest to keep, I can't say the same for the others. I thought I'd start my blog with one of my favourite recipes, my beloved little gingerbread men. They always go down a treat with young and old alike and never hang around long in our kitchen thats for sure.
Ingredients
12 oz Plain Flour
2 teaspoons Ground ginger
1 teaspoon Bicarbonate of soda
4oz Butter
6oz Soft light brown sugar
1 medium egg
4 tablespoons Golden Syrup
Method
Preheat the oven to 190°c /375°f/gas mark 5
Mix the flour, ground ginger and bicarbonate of soda in a large mixing bowl. Cut the butter into small cubes and add to the mix.
Rub the butter into the flour until you have a breadcrumb effect.
Break the egg into a small bowl and add the golden syrup, beat well with a fork. Stir into the flour mix to make a dough.
Lightly cover your work surface with flour, stretch out your dough until smooth.
Roll out the dough to 5mm thickness and cut out using a gingerbread man cookie cutter.
Place on a baking sheet and bake for 10-12 minutes or until golden brown.
Leave to cool on a wire rack.
I absolutley love making these little guys, especially when it comes to piping on their little faces and giving them some character.
A little tip: to help the golden syrup off your spoon, stand your spoon in a cup of boiling water before you measure out and the golden syrup will just slide off your spoon every time :-)
